I am a totally soup lover, (not quite a Soup Nazi, but almost). I even own a soup bible. I can't say that I have made that many green soups in my life, but I put that down to not being able to find or create a good enough recipe to get the balance of fresh and filling right.
On a recent trip to Canada, I had stocked up on Bon Appetit's Healthy-ish issue, with a tonne of inspiration on delicious home cooked comfort food. Totally mesmerised by the bowls of goodness that graced both the front cover and inside, I started making quite a few recipes and ventured into searching the web for some green soup ideas.
That's when I came across this Green Minestrone, also by Bon Appetit. With my goal to shoot more soups and savoury dishes, I spent one afternoon cooking and shooting in the fading summer sunlight.
