Apricot Pie & Triple Vanilla Bean Ice Cream

Commissioned to write and cook the summer food column for Decor8 Blog, I put together this Apricot Pie and a Triple Vanilla Bean Ice Cream.

Apricot pie was my favourite type of fruit pie as a kid and I have fond memories of my mum making an apricot crumble for me and an apple crumble for my sister.

Putting my lattice work skills to the test with this one!
